- 1 whole organic lemon, washed well and quartered
- 2 tablespoons extra virgin olive oil, soft and herby
- 1 small piece fresh ginger, about 1 inch, peeled
- 2 tablespoons raw honey (optional for sweetness)
- 700 ml cold filtered water
Instructions
- Prep the lemon: Rinse the lemon well and cut it into four pieces. Keep the peel on for the creamy texture and added nutrients.
- Add everything to the blender: Place the lemon pieces, ginger, olive oil, honey, and water into the blender.
- Blend until creamy: Start on low for a few seconds, then blend on high for about 45 seconds. The drink should look pale yellow and lightly frothy.
- Strain the elixir: Pour the mixture through a fine mesh sieve into a jar. Let it drain slowly so the texture stays smooth.
- Serve fresh: Drink right away, or chill it for up to 3 days and shake well before serving.
Notes
- For a sweeter taste, choose Meyer lemons.
- If the drink tastes too strong, add a splash of extra water.
- If you do not have a blender, shake lemon juice, olive oil, ginger powder, honey, and water in a sealed jar for a lighter version.
